Mashed Light Pumpkin:
Makes 4 servings;
Calories per serving: 50.
ingredients:
1/2 small pumpkin;
1/2 onion chopped average;
2 tablespoons olive oil;
1 tablespoon rasa light margarine;
1 cup of skim milk.
Method of preparation:
Boil the pumpkin until soft, remove from water, squeeze and set aside.
In a saucepan, brown the onion in oil, add the pumpkin, margarine and milk, stir well until you reach the puree consistency, remove from heat and serve.
