Recipe: Bacon goat cheese hash brown cups
Details
- Serves: 12 muffins
- Total time: 45 minutes - 1 hour
Ingredients
- 20 oz shredded hash browns
- 3 tablespoons avocado oil
- ¼ teaspoon salt
- ¼ teaspoon fresh black pepper
- 10 eggs
- 1 teaspoons onion salt
- 8 slices of bacon
- 2 cups fresh spinach, chopped
- 4 oz goat cheese
Directions
- In a large bowl, mix the hash browns, oil, salt and pepper.
- Distribute the hash browns into a greased muffin pan.
- Bake at 400 degrees F for 20-25 minutes or until crispy and brown.
- Reduce the oven to 350 degrees F
- In a large bowl, whisk together eggs, onion salt, and chopped spinach.
- Once hash browns are crispy, pour the eggs into each cup.
- Top with broken pieces of bacon and chunks of goat cheese.
- Bake at 350 degrees F for 18-20 minutes or until the eggs set on top.
These are dangerous. They are so good and almost too easy to eat, so make sure you either have enough people with you to share, or cut down on the recipe and make less. Otherwise, you will eat every single one.
Let me know if there are other variations you would like me to try out. This is one of my favorite breakfast dishes and they are so easy to mix and match with different ingredients, so I don't mind making a few different version in the future.
