Smoked Paprika Couscous and Vegetable Wrap

Smoked paprika and the smallest amount of tomato sauce lend a lot of flavor to the grains in this wrap. I used the veggies I have on hand, but you can use whatever you like in your version. That said, I should state that crisp and fresh flavors added by the cucumbers and radishes added a brightness to the wraps and I wouldn’t forfeit them in any version.

Ingredients:

  • 2 tortillas
  • 2 radishes, sliced lengthwise
  • ½ cucumber, diced
  • 1 cup greens of your choice
  • ⅔ cups couscous
  • 1 cup vegetable broth
  • 2 tablespoons tomato sauce
  • ½ teaspoon garlic salt
  • ½ teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ¼ cup cooked kidney beans
  • 1/4 cup prepared garbanzo beans
  • ½ cup fresh broccoli
  • 1 carrot sliced crosswise
  • 2 tablespoons crumbled feta cheese
  1. Prepare couscous by bringing vegetable broth to a boil, then adding couscous and cooking over medium low heat for 10 minutes. When all the vegetable broth has evaporated, remove from heat, stir in tomato sauce, onion powder, paprika, garlic salt, broccoli, carrots, and beans.
  2. Meanwhile, heat tortillas and place on plates. Divide couscous and greens between the two tortillas.
  3. Top each wrap with feta, cucumber, and radish. Fold or roll burrito-style and enjoy.
