I am a food technologist. There are many species of mushrooms in the world, of which only a small group are edible. In the edible mushrooms can be distinguished mainly the pileus or hat, the foot or stipe, and the hymenium. Edible mushrooms are not only appreciated for their texture and flavor, but also for their chemical composition, nutritional value and antioxidant capacity. Worldwide the champignon is the most produced edible fungus, followed by Pleurotus spp. and the Shiitake.
