Mango Coconut Rice

Delicious mango recipe

Ingredients:

2 medium-sized
1 cup basmati rice
1 and 1/2 cups water
1 cup coconut milk
1 ripe mango, diced
2 tablespoons shredded coconut
1 tablespoon butter or coconut oil
Salt to taste

Instructions:

Rinse the basmati rice under cold water until the water runs clear.
In a saucepan, combine the rinsed rice, water, coconut milk, and salt.
Bring the mixture to a boil over medium heat, then reduce the heat to low and cover the pan with a lid.
Simmer the rice for about 15-20 minutes, or until all the liquid has been absorbed and the rice is tender.
Remove the pan from heat and let it sit covered for another 5 minutes to allow the rice to steam.
In a separate small pan, melt the butter or coconut oil over medium heat.
Add the shredded coconut to the pan and toast it for a few minutes until it turns golden brown and fragrant.
Fluff the cooked rice with a fork, then gently stir in the diced mango and toasted shredded coconut.
Serve the mango coconut rice as a side dish with grilled meats, curries, or enjoy it on its own.
