Carrot cookies in glaze
Ingredients:
1 Cup wheat flour
1 teaspoon baking powder
½ Teaspoon salt
2 teaspoons cinnamon
⅛ A teaspoon of nutmeg, ground or freshly ground
½ Cup sugar
1 Cup oatmeal
1 tablespoon ground flax mixed with 3 tablespoons water
¼ Cup maple syrup, or any other liquid sweetener
2 teaspoons vanilla extract, or vanilla to taste
½ Cup raisins
1 Cup carrots, finely grated
For glaze:
½ Cup powdered sugar
zest of ½ lemon
3 tablespoons lemon juice
1 tablespoon rice or almond milk
Method of preparation:
- Preheat the oven to 170 degrees.
- Mix a tablespoon of linseed with three tablespoons of water and set aside.
- In a large bowl, mix flour, baking powder, salt, cinnamon, nutmeg, sugar and oatmeal.
- Add the remaining ingredients, including cooked ground flax. Mix thoroughly and sculpt the balls from the mass (the dough will be quite sticky, so we advise you to moisten your hands), then put them on a baking sheet, covered with baking paper or silicone Mat.
- Flatten the balls with a fork or any other way.
- Place in the oven for 18-20 minutes.
- To give a good cool and cover with glaze mixed to prepare the ingredients.
