STEEMIT SANDWICH CONTEST #40 @Jaybird: HOT PORCINI WELSH RAREBIT, a delicious spin on a proper British classic

Welsh rabbit or rarebit has a long history, it's origin can be traced back to the 18th century. It's basically toasted bread with a crispy cheesy topping, the ultimate comforting  sandwich! 

There's a lot of variations and this one is mine...

THE BREAD: home made buckwheat bread with crispy onions (buck wheat and white flour, yeast, salt, water, crispy onions, thyme)

THE FILLING: sauteed local porcini mushrooms, butter, salt, fresh chives and thyme, garlic, dried chilly 

THE TOPPING: egg yolk, sour cream, mustard, salt, pepper, grated cheddar cheese

TOAST THE BREAD, LOAD IT WITH THE KING OF MUSHROOMS, ADD THE CHEESY TOPPING AND UNDER THE GRILL IT GOES! FINISH BY SCORING THE CRUSTY TOP AND SEASON THE SANDWICH WITH WORCESTER SAUCE!!HOW DELICIOUS IS THAT???? YUMMM!!!!

          Great work on this one, love the other fresh ingredients too! Homemade Buckwheat bread! Dam.... And also that crazy egg/cheese sauce haha..wild.

            Great post and thanks for sharing. If I had to pick, I'd pair this with a Lager. The two would be delicious together

              This is definitely elevated from the classic beer and cheese rarebit. I love the addition of crispy onions in the buckwheat bread. I am drooling!

              Haha, thanks @loveself!! I was drooling too, then I ate the whole thing and couldn't move for hours :) :) :) This is no diet food but super tasty!!
