Falafel made with chickpeas, not only is an excellent source of protein, high in complex carbohydrates and soluble fiber, but also contain tons of nutrients like calcium, iron, magnesium, phosphorus, potassium, zinc, copper, manganese, vitamin C, thiamine, pantothenic acid, vitamin B, and folate.Source

There has been much debate about the origin of Falafel, it is believed to have originated in Egypt about 1000 years ago and was invented by the Coptic Christians who ate this as a meat replacement during Lent. Some claim that it dates back to Pharaonic Egypt. India has laid claim to being the original home of Falafels; it’s also eaten by Muslims during Ramadan and on the other side of the battle lines it's considered a national food of Israel!

Before a war breaks out about the origin, we will not take sides but one thing is for sure that despite our differences, these delicious little nutty balls are enjoyed by people all over the world, in wraps, salad, in meze platters and even in sandwiches!

I will be serving delicious Chickpea & Quinoa Falafel & Salad Pita Pockets with a peppery & minty Coconut Yogurt dressing.

So why are we making sandwiches every week here on Steemit?

A collection of some of my sandwiches since week 19

I will tell you what you are missing out by not showing us your sandwiches - @jaybird has been running & sponsoring this contest now for 78 weeks, sometimes with the help of some generous Steemians, but mostly on his own Steem as the prize payouts far outweigh the post payouts with Steem being so low!
A big round of applause to our manwich maker and creator of SSC, @jaybird for his generosity!
So guys and dolls, what are you waiting for, there still is plenty of time, read @jaybird's Post and show us your sandwiches.

One last quick look at the making of my Chickpea & Quinoa Falafel Pita Pockets with Salad and a peppery & minty Coconut Yogurt dressing.

I love falafel! Have you made your own? Just asking as you didn't mention the recipe. I always make baked falafels but recently we found a great recipe that is saying to fry them. I tried and it didn't work out. Falafels were falling apart and soaking all the oil so I placed them in the oven and they baked just perfectly.

Looks like a great combination of falafel, salad and pita bread. I am not such a fan of yogurt in general so I would probably use tofu mayo (homemade) but for the rest I would be thrilled to try your recipe! :)

I still want to make my own Falafel, these were made by a local frozen vegan food manufacturer, they have delicious products, these were really excellent!
Thank you for your feedback @delishtreats

Love this @lizelle! Falafels are so tasty and a pita bread is perfect! Another fantastic sandwich this week :) I'm sure your hubby is pretty pleased after this lunch!

These falafels were really delicious, made a lovely sandwich! Hubby started his keto diet today, I'll follow later but can't afford to feel ill at the moment (as they say happens in the beginning) I have two students needing meals for the next five weeks! Most of our guests self cater so I'll wait till this is over.
Thank you for your lovely comments!

They're delicious Joan, Fry's makes them, it was frozen, so easy, definitely buying them again, makes a lovely snack on its own.
Thank you for your feedback :)

Hi @lizelle it's wonderful to see that you're still going strong. I've been absent for many months, due to a number of reasons. I see I've missed out on some amazing culinary creations of yours! I hope your son is well and hope to eventually catch up with you at Glenmore one of these days.

So nice to see you Leigh! My son is doing ok, it's almost a year since he lost Angie. How I long to go down there, we've been so busy but will try and go some time soon, will let you know.

What a follow up to last weeks banger!

you are just the ultimate sandwich queen! That gif at the end is great to see the progress 🥪

Ah thank you @princessmewmew, you are so kind!

Now those are some flavors I can strongly get behind. Falafel Is truely the best. Great stuff this week!

I akways order Falafels if it's on the menu, just love it. So glad I found this particular one in the supermarket, definitely will land in my shopping basket more often, tasted homemade!

Your sandwich looks amazing but the fact that @jaybird has been able to keep his contest running 78 weeks is truly amazing. I commend him for his efforts and generosity as well.
