SteemitSandwichContest Week#29 - Pepper Parcels
I will be remaking an old classic, French Toast, but with a twist, stuffed to the brim with red and yellow sweet peppers, mushrooms, smoked Salmon Cream Cheese and Cheddar Cheese.
Ingredients:
2 slices dark brown bread
(I used a tasty Rooibos & Rye Bread - Rooibos is an indigenous plant that only grows in the Cederberg mountan range in the Western Cape in South Africa. The Khoisan people have been using the leaves to make tea for about 300 years already.
This is available commercially, has a distinctive flavour and is known for its many health benefits.)
Smoked Salmon Cream Cheese
Red & Yellow sweet Peppers, diced
Mushrooms, diced
Cheddar Cheese, grated
2 Eggs, beaten and seasoned
Butter
Cut the centre part out to make a kind of bread 'frame'.
Spread cream cheese generously onto the cutout rectangular shape
Fry peppers and mushrooms in a little butter, then divide into two heaps to fit inside the bread 'frame'.
Add a tiny bit of olive oil and extra butter to the pan and frame peppers and mushrooms with the bread.
Turn heat down to medium-low, and carefully pour beaten egg into centre of bread.
Place a generous amount of grated cheese on top. I spread this slice with a little extra cream cheese.
Seal the filling with the rectangular cut-out piece, press down a little.
Now for the tricky part - carefully turn the sandwich over to brown the other side.
Revealing delicious caramelised peppers.
Turn it over again to ensure eggs are set.
Crispy fried cheese all around the edges.
Turn sandwiches over again to show off the red & yellow peppers, halve it for the guys.
The gals will prefer a smaller sandwich, so quarter it.
Note: My character Mama made a very similar sandwich a couple of months ago here on steemit, but this one has new additions and never been seen on SSC.

That is so cool how you made the pockets. When I first seen the cut outs I thought you were about to get rid of the crust. Although I don't remember ever trying smoked salmon cream cheese this looks like a delicious sandwich.
It really was yummy, I will add some smoked chicken or ham to the peppers next time, nice meeting you @smawkward :)

That looks so nom! I want to try heh, and yes, I want a smaller piece. For the meat eater inside of me, I would also require bacon.
