This week, I have decided to use curry to make ALL my sandwiches. I came up with this curry theme only because I was looking at airline tickets, which led me to check airport duty free shops, somehow, I ended up browsing through airport restaurants. All of a sudden, I remembered this awesome curry chicken sandwich I had at the Hong Kong airport years ago. Then, this curry theme sandwich idea came to mind.

We all know that airport foods aren’t necessarily the greatest, but once in awhile, you do come across some good quality or unique food items. For example, Paris’s CDG has a Laduree and I went nut with the macaroons (Of course, I was in a serious sugar coma the whole flight and that was crazy!). Or, Tokyo’s Narita has a Nanosato that serves up the most delicious udon and sukiyaki that I stuffed my face with (Again, I ended up in another food coma but this time, slept through the whole flight).

Hmmmm, I just got side-track again. Yes, my thought process is quite ‘something’ to say the least. But hey, I don’t believe I am the only one here. So, do not judge, lol!

So yeah, that was one delicious curry sandwich I had. Come think about it, curry goes so well with bread. Whenever I make curry at home, I often use bread to soak up all the delicious and flavourful golden curry sauce. Super yummy, if you ask me. Therefore, I decided to make my own Curry Chicken Sandwich at home.

Step 1 - Prepare curry chicken

Ingredients: Chicken, Onion, Garlic, Ginger, Curry Powder, Turmeric, Cumin, Coriander, Cayenne Pepper, Garam Masala, Salt, Pepper and Coconut milk

Method: Brown chicken and remove from pan after that. Fry onion, garlic and ginger until soft in the same pan. Add seasoning to onion mixture and fry for two minutes. Add coconut milk to make a thick sauce. Return chicken to the sauce and cook for at least 15 minutes. Remove chicken when it’s cooked and turned into this golden nuggets. Reserve 1/4 cup of the reduced curry sauce (I tell you, this sauce is full of flavour and will transform the sandwich, omg).

Step 2 - Assemble the Sandwich:

Ingredients: Bread of your choice, Tomato, Spinach, Yoghurt, Reduced curry sauce, Cooked Curry Chicken

Methods: Mix the reduced curry sauce with plain yoghurt. Assemble the sandwich by spreading the sauce on the bread. Layer with spinach, tomato and curry chicken.

And then, you are done!

Great array of ingredients, particularly noticing the use of Garam Masala..that's a combo of a bunch of indian spices right.?

In any case, i'm diggin the curry theme of course. I don't usually love super spicy curry, so the golden is very appealing.

Pumpernickel bread? Interesting choice! No one has used that in the contest so far..just saying

You are spot on here! Curry, chicken, and dark bread. This looks awesome- the fragrant curry and tangy yogurt is such a great combo too. I usually add curry powder to my chicken salad with green apples. Yum! I actually made a similar sandwich for the first sandwich contest but of course forgot to add the name tag so I still have the photos - maybe I'll just post it one day. I think you and I have kindred palates. ;)

I think so 'two' - Yes please do share with us one day. As a result of eating tonight, I am in a serious food coma. So, I am thinking we all should add warning in our post to warn our readers the side effect = food coma. LOL. Heading to bed now. Good night @jaymorebeet
