I seldom use mayo and even less so know after my wife got IC and has to watch her diet and I started reading the ingredient lists really put me off store brought so if I ever have the urge for it I may make my own, exxcept I am not sure this recipe would be any good for my wife lemon is one of the things she has to avoid

Ooh, IC is a nasty disease. Sorry to hear she's affected with it. Can she have any vinegars? Or are they too acidic too? It doesn't have to be lemon juice, but something acidic is needed.

Yes it is such a nasty disease she used to love spicy foods and now has to eat so plain to try and avoid the flares getting to intense, unfortunately she has to avoid anything acidic, that really causes bad flares

I noticed a recipe that calls for adding the lemon juice after forming the emulsion of the eggs and oil, so looked like it isn't needed for that reason. It seem it's more for flavour and for helping it last longer. If you didn't't use the lemon, you'd probably need to pasteurise the eggs, and make just a small batch. Worth a try, if that's a food that would make life a bit more interesting for you both.
