INGREDIENTS:
2½ kilos of very green millet.
1 box of bicarbonate
12 cups of water.
15 cups water.
2 kilos of cardboard.
20 spice cloves.
3 to 4 fresh fig or fig leaves (in the Andes there is a little seed that is called "canelita" and also gives a tasty aroma but is optional something like 5 only)
PREPARATION:
The millet shell is removed along with the seeds and cut into very thin slices, 1/2 to 1 cm. Thick by 10 to 12 cm. Long, spread on a tray, sprinkled with baking soda and left until the next day. They can also be spread and left in the sun for a day, so they stand firm, and skip the baking soda.
In a large pot put the milky with water to cover about 3 cm, a dozen cups of water. It is brought to a boil and is cooked over high heat and covered for about 2 to 3 minutes.
Strain through a strainer, wash well with running cold water and set aside.
In another large pot put the remaining 15 cups of water with the paperboard. Bring to a boil and cook for 15 minutes. Transfer to a container, wash the pot and in the same pot the liquid is drained with a cloth strainer, in order to remove the impurities of the paper.
To the pot that contains the liquid is added the milky that has separated, the cloves and the leaves of figs or fig tree. Bring to the boil and cook uncovered 1 hour 30 minutes or until the syrup thickens but not much, when slowly drop the drops of a wooden spoon and form a trickle at the end. The slices of the milky must be bright.
It is removed from the fire, the nails and leaves are removed and allowed to cool in the same pot. He gets in the fridge for about 6 hours.
It is served in a glass or glass candy, you can add it by serving cream cheese (optional)
