Today I tried making Creamy Mushroom Udon!

Because I had opened cream in my previous Strawberry Cheesecake cookie, I decided to try out another recipe, this time savoury, to try use the rest of the cream. I had recently seen a tiktok of this dish, but with no recipe linked, so went to search for a similar one.

I finally found ["Easy 15-minute Creamy Mushroom Udon"] https://christieathome.com/blog/creamy-mushroom-udon/

I already had most of the ingredients, which were:

  • 500g udon (A type of thick Japanese noodles)
  • 200g of cremini mushrooms
    I didn't have cremini mushrooms - So I just used normal ones that I had.
  • 250ml heavy cream
  • 35g onion
    I honestly didn't weigh this, I just used half a large onion
  • 60ml water
  • 3 cloves garlic
  • 45ml butter
  • 30ml oyster sauce
  • black pepper
  • 1 green onion
In total, these ingredients cost about £9.80 at best, which is about 60 STEEM today while I am making this post (24 July 2024).

The title was definitely right about it only taking 15 minutes! And it was great that it made about 3 portions for me, but the recipe says it only does 2 portions. But this may just be a personal thing as I don't tend to have a big appetite.

So before I started cooking, I made sure to prep everything, I cut up the mushrooms, onions, garlic and left my udon noodles to soak for about 30 seconds in boiling water - Just like the recipe states to do.

So while I was doing step 3 from the recipe, I found just randomly putting in the water (instead of measuring like in the recipe's ingredients list) was definitely a bad idea. It made it quite watery.
My next mistake was the oyster sauce. I didn't have any! So I googled a substitute as I realised I didn't have any whilst I was cooking. Google told me soy sauce would be okay but the flavour was too weak in my opinion. If anyone tries this recipe, I would definitely recommend to use oyster sauce just like it says!

So at this stage, it says to let it simmer and wait for the sauce to thicken. My sauce didn't thicken! I think this is probably related to me not being able to use the oyster sauce. After waiting 2-3 minutes, I added in my udon noodles.

All done!

I was overall, still happy how it turned out, even without the oyster sauce. I know the oyster sauce definitely would have added more flavour. But after adding the green onions, it felt nice and light as a dish, would recommend!
