This is a great idea, well executed. I've known you for a long time now, and know just how passionate you are about the intersections of law and tech. If I had to think of someone to make a project such as this, yours would be the first name on my list. While this is not quite a software project, it is an enabler of future projects, and is itself open source. I think it is absolutely part of Utopian's bailiwick.
I only have one thing about the post I'd like to point out, something which may be a result of the differences in the way gender works in English and Hebrew. You write "each party will be required to use his wallet address to sign the document." That's a direct translation of the way this sentence would work in Hebrew. But English allows for a non-gendered form, which would be preferable. Replacing "his" with "theirs" would make the sentence more inclusive.
Also, you have a tiny proofreading error at the very end there. If you look at your final line before the links, I'm sure you'll see and fix it.
