Zucchini pancakes
When someone asks you 'What is happiness?' You must answer them by making this savory zucchini pancakes.
Trust me, it feels like nirvana in your mouth!
To make this bundle of joy, you'll need:
-1 small zucchini (or 1/2 depending on its size)
-1 cup of chopped veggies (anything you love)
-Chia egg (or 1 slightly beaten egg)
-1/3 of a cup of quinoa (optional)
-6 to 8 tbsps of all-purpose flour (or any flour of your preference)
-salt
-pepper
-Vegetable oil (optional)
Start off making your chia egg by stirring in a bowl 1tbsp of chia with 2 and 1/2tbsps of water and let it sit there for at least 5 minutes, then grate the zucchini using preferably the large grating side of a box grater avoiding to grate the seeds.
Mix the grated zucchini with the chopped veggies; I used green pepper, carrots, habanero pepper (here in Venezuela we have a variety called "ají dulce" which isn't too spicy) and onions, add the chia egg, the quinoa, salt and pepper to taste and the 6tbsps of all-purpose flour, if the batter gets too thin from the liquid in the zucchini, add the remaining 2tbsps of flour.
Heat a non-stick pan over medium heat (if you don't have a non-stick pan, I advise you use vegetable oil or you'll make a mess) and cook your pancakes 2 to 4 minutes on each side. You can also use an ice cream scoop spoon so all your pancakes look and cook evenly.
