Easy Cheesy Vegan Spinach Lasagna - Healthy and Delicious, 30 minute recipe! 🌱🧀

Since I love lasagna so much I had to share this recipe with you all but I made a slight adjustment. If you’re like me and can eat lasagna by the bucketload you’ll appreciate that I made this easy vegetable lasagna just as tasty as traditional lasagna but with a healthy twist. With the small addition of some spinach and mushrooms, you can eat away at this lasagna all you like!

This recipe can easily be made gluten-free by substituting the lasagna sheets for gluten-free ones.

Ingredients

For the white sauce:

  • 1 3/4 cups non-dairy milk you can use any plant-based milk
  • 3 tablespoons cornstarch
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon sea salt
  • 1 teaspoon nutmeg

For the filling:

  • 270 grams tofu
  • 6 tablespoons tomato sauce
  • 1 1/2 teaspoons miso paste optional
  • 1/4 teaspoon paprika
  • 270 grams spinach cooked and thoroughly drained
  • 1 tablespoon sriracha sauce
  • 250 grams white button mushrooms (optional)

For the assembly:

  • white sauce
  • filling
  • 8 lasagna sheets cooked as per instructions
  • vegan cheese (optional)

Instructions

Making the white sauce:

  1. Heat a saucepan over medium heat. Place all the ingredients for the white sauce into the saucepan and whisk to combine them thoroughly.
  2. The sauce should be heated slowly while stirring gently until the liquid starts boiling and thickens.
  3. Remove from the heat after 5 - 10 minutes. The sauce should be smooth and creamy.

Making the filling:

  1. In a large bowl, add the tofu and start to break it apart until it reaches a consistency like ricotta cheese. Stir in the tomato sauce, miso paste, white sauce, paprika and sriracha until the mixture is well combined.

  2. Chop the cooked and drained spinach into fine pieces. Try and cut it as small as you can. Add it it the bowl and mix to combine. You can add the cooked mushrooms if desired.

  3. The mixture is finished as soon as you've finished tasting it and adjusted the salt and pepper quantities to your liking.

Assembling the lasagna:

  1. In a nine inch (23 cm) dish, add a thin layer of white sauce (keep a small amount aside for the top of the dish) and some of the filling to the bottom. This is to prevent the pasta sheets from sticking.

  2. Now add first layer of pasta and then a thicker layer of filling on top.

  3. Alternate between a layer of pasta and a layer of filling until the filling runs out. You should have a filling layer on top if you have split the filling up evenly between the layers.

  4. Spread the reserved white sauce over the top of the lasagna and add the vegan cheese on top.

  5. Bake the lasagna under the grill for 15 minutes until the top starts to crisp and turn golden. Let it cool for a few minutes, slice and enjoy!

Oooh, I have some edamame-based lasagna noodles in my cabinet that I have been waiting to try. This might be a great way to try them!

How awesome, I have never heard of edamame-based lasagna noodles 😱 I love alternative noodles because they always taste so good. My favourites are buckwheat boodles, they go down so well with some stir-fry 🤤

I'm pretty lucky with the alternative options I have access to here! I think the edamame noodles are pretty mild in flavor, so they blend pretty well with most flavors of sauces. Plus they are packed with protein so they fill you up, too! 😀

I've never heard of that type of noodle before either! So interesting! I bet it would taste good!

Wow have I just found a recipe for vegan cheese sauce that doesn't include nutritional yeast? I've been looking for it for a while now! Thanks for sharing the recipe! :)
