Grain-Free Raw Granola
It is not a mystery I love granola, especially when I succeed to make it raw and with only fruit to sweeten it. That just change all my smoothie bowl. Add a crunchy texture to it. I love throwing some piece my bowl. this granola is a good way to get some healthy fat, protein, fiber, mineral and vitamin from the morning and even during the day as a snack. Goes really well with a coconut yogurt and some fresh berries.
This Raw Granola is made without any grain so no buckwheat, no oats, only nuts, seed and fruits. Suitable for paleo. it is just a little heaven, perfectly sweet with a mixture of dates, banana and apple.

In order to keep it raw, it has to be dehydrated for 12 hours. But don't panic if you don't have a dehydrator you can still dehydrated it in your oven at the lowest temperature you can. You can also cook it at high temperature it won't be raw anymore but still super delicious and tasty.
The most important step in this raw granola is the soaking process. Most nuts have enzyme inhibitors that protect them in early stages of growth, but also make them really hard to digest for us. By soaking nuts in water, these enzymes are neutralised. Therefore the nuts become easily digestive for our organism.

- 150g Almond (soaked for 8hours)
- 100g Pecans (soaked for 6 hours)
- 40g sunflower seed (soaked for 4 hours)
-1/2 organic Apple - 1 ripe banana

- 1 tsp coconut oil
- Raisin or goji berries
METHOD
- Drain and rinse very well nuts and seeds
- In a mixing bowl put nuts, sunflower seed, raisin, salt and cinnamon

- Add the mixture to the mixing bowl with the other ingredients

- Spread the mixture on a baking paper or specific shit for a dehydrator

I would highly recommend breaking the granola bark at halfway of the dehydration process
