Hey you lovely beings!

I want to share with you a recipe that i made up today and i am really satisfied with the result. I might even put it in the menu of our upcoming vegan kitchen bar as a dessert.

I will take you through the steps and show you the ingredients i used. It is a very simple combination, and yet so rich.

Ingredients:

  • 4 cups of soaked almonds and pecans
  • 1 cup of medjoul dates
  • 4 tablespoons of cacao powder
  • 4 tablespoons of carob powder

Cacao or cocoa you can find anywhere in the supermarkets. I don't know about carob though, i used it because it is something that grows a lot of in Cyprus and i am in love with it. It is not necessary to use for the recipe, as the cacao does most of the work in the flavoring.

The medjoul dates are expensive, but they are so delicious. You can use whatever kind of dates you like though for the recipe.
I used both almonds and pecans.

Instructions:

  • Soak your nuts for 12 to 24 hours. This helps you digest them easier and it also adds volume to your recipe as they double in size.
-Put all the ingredients in your food processor and give them a good blend, until they make a nice dough.
-Cut a good piece of cling film, shape the dough in a cylindrical shape and wrap it tightly with the cling film. Then set it in the fridge for 2 to 3 hours as shown in the picture.
-When it feels firm and cool, unwrap it, and cut it in the size you like.

Try this recipe and serve it to your friends and family. I am sure they will be amazed by the presentation and the taste you put together.
