Veggie sushi
Mushrooms and/or eggplant
3 cloves of Garlic
Half an Onion
Avocado
Cucumber
2-3 servings of rice
1 tablespoon Rice vinegar
Sugar
Salt
Nori
Soy sauce
Sesame seeds
I make the rice first. While that is cooking I sautate the garlic with olive oil or a yummy Asian sauce. I add sesame seed te the veggies while they are cooking. I then add the onion, spinach, and mushrooms. Feel free to use any veggies. Once the rice is done add 1 tablespoon of rice vinegar, salt and sugar to taste. Let the rice cool. Then start rolling! I like to put the nori on the outside because I don't have a mat.
