Sweet Potato & Black Bean Chili 🌱
A rainy day vegan chili
All you need to know how to make this delicious flavoursome vegan/vegetarian chili-
1 tablespoon plus 2 teaspoons extra-virgin olive oil
2 medium-large sweet potato, peeled and diced
1 large onion, diced
4 cloves of garlic, minced
2 tablespoons chili powder
4 teaspoons ground cumin
1/4 teaspoon pink himalayan salt
2 1/2 cups water
Can of black beans, rinsed
Can of diced tomatoes
4 teaspoons lime juice
Handful of chopped carriander
Firstly you will need to fry the onions in some olive oil with all the seasoning. Once the onions have softened. You can then add all the other ingredients and let simmer from 30/40 minutes.
Serve with wholegrain rice and some carriander on top. And enjoy 🌿
