Caramel-Toffee Filled Banana Cream Pie! Special Recipe for a Special Occasion! (Raw, Vegan, Gluten-Free, Xtra Delicious) 💛🍌
Happy Humpday (I mean Wednesday!) Get yourself prepared for your taste-ticklers to fall in love with the addictive toffee filled banana cream pie recipe below!
In case you’re not already ‘in the know’ today is a very special day which called for an extra delicious recipe! I decided to start a friendly little contest on Wednesdays which I am calling #veganwednesday and today is its first time running! See the post about it here!
The contest is meant to be a fun way to share and connect with one another! The extra fun thing about it is that it’s not restricted to ‘vegans’ even though the tag might suggest so, so please don’t be afraid to enter if you don’t identify with the term! It was created to be a light and inspirational challenge to gain a little insight into the plant-based world and maybe win a little for interacting with it, I hope you’ll join in! ;)
Since I did a guidebook recently on what it’s like to be vegan explaining a little about how I eat and why, I decided for this week to give you guys a real treat to chow down on! I know you won’t be disappointed by my choice!
Toffee Filled Banana Cream Pie
What you need:
All about that base:
• ½ cup almond flour
• ½ cup coconut flour
• 1/4 cup coconut sugar
• Sprinkle of pink Himalayan sea salt
• 1 handful of pitted dates (I used about 10, I added more than the picture shows)
• 1 handful of walnuts (last minute decision, not show in photo)
• 1 tsp vanilla extract
• 1 tbsp organic palm nectar (use coconut nectar as a sub)
Toffee Delight:
• ¾ c cacao butter (melted)
• ¼ c maca root powder
• 3/4 c coconut nectar (I used half coconut, half palm nectar but the palm nectar I get is from a locally, eco-responsible source that I trust)
• 1 tsp vanilla
Banana Hammock:
• 1 large banana for inside (I used a red one, exotic here but a little bit more orange in color!)
• 1 sliced banana for on top
Creamy Dream:
• 1 tsp vanilla extract
• 1 tbs coconut nectar
• 2 cups coconut cream (I made mine fresh from a coconut and added vanilla and a bit of coconut nectar, check your ingredients, you might not need to sweeten!)
What to do:
That Base:
Place almond flour, coconut flour, coconut sugar, walnuts, dates sea salt and vanilla extract in a food processor. Blend away! Once you see it start to clump in there, take it out and press it down into your pan. I just brushed mine with coconut oil first but you can use parchment paper if you have some and would like it to be easier to drop out of!
Toffee: BEAT IT!
Melt your cacao butter. (I use a double boiler, I am not a fan of the science oven…cough… microwave!) Place the melted cacao butter in a bowl, add the maca powder, coconut nectar, and vanilla and BEAT ITTTT! (BEAT IT!*) Make sure there are no clumps! Pour most of the toffee onto the crust and keep the rest to eat, I mean put on top!
Stuffing your piehole (I mean pie):
Slice your banana into coins the size of which is your choosing! Place the fruit money on top of the caramel layer, making a work of art! (It’s going to be coated so no need to make it pretty unless you want to of course!)
Cream Dream: Whip it real good!
My coconut cream was already plump from making it in the food processor but you might need to take the cream (if you’ve bought it) and add the vanilla and coconut nectar to the processor until it becomes fluffy! Once it looks like a cream dream, you can put it into a fancy pastry bag to plump it out on top!
Your pie- oh my! Let the banana show you the way:
Spoon out your cream into the bag, then let art have its way with ya! I am no artist, I tell you this so I just made a bunch of globs with my special little endpiece and then continued until I had used up all of the cream!
Next, dump (I mean drizzle) your toffee on top.
I got carried away between layers of banana, cream, toffee. I just kept going! Feel free to let the banana guide you!
Ok, I know you’re going to be crushed by this but it’s gotta go away for a bit, trust me, it’s for its own good! You have to put it in the fridge or freezer for the best tasting result. Trust me from experience, having to do this made me want it so much more! Absence makes the heart grow fonder and all that…
You can even make your bananas into hearts like mine!

Haha to tell you the truth, there is a story behind those faces! I was shocked at how good it turned out because I was freestyling and started to get worried... then I got mad at how good it was because I felt the need to eat it all right then and there :P
I really do find myself pouring my heart into my recipes, I think that's part of the healing. If we eat foods we are so detached from, how much can we really get from them? Now, if we eat a meal lovingly prepared, it must have many more benefits than we can even hope to know. I'm happy to share, I just wish I could find a way to share the taste ;) I hope technology advances soon!

I am not a great cook as you, but I know exactly how you feel you feel when you freestyle and it turns out to be delicious. hahah For me, it is the best way to cook. It sparks up my imagination. I mean having fun doing it, and it turns out delicious. It does not get much better than it for me. :)

I am not normally one to have something so so sweet and my red bananas are sweet enough on their own so I might need to adjust this so I can eat larger slices next time round ;) Hope you're enjoying the weekend!
