A lot less environmental problems for sure. The amount of water and feedstock used by cattlefarms is crazy.
That said, we don't even need to go full vegetarian. We just need to cut the amount of meat we eat.
It takes 2,400 gallons of water to produce 1 pound of meat.
Meanwhile, it takes 25 gallons of water to produce 1 pound of wheat.
