Foodie #5: Lemongrass Kumquat Chili Chicken Shanks 🐓🐓🐓🍺🍺🍺
Every countries has its own culinary culture. If western countries loves enjoying fast food as fish & chips, burger, KFC or Pizza to save time and take it easy, most of Vietnamese loves cooking themself to have more nutritional and safe meals in daily life.
That's why there are some differences in cuisine from areas to areas. Today I wanna introduce to you guys 1 special favorite food of Asian countries that European may dare not to enjoy it.(My own opinion)
Recently, Lemongrass Kumquat Chili Chicken Shanks becomes popular to Vietnamese, especially teenagers who are avid noshers. My younger sister, @maiquynh also loves it so much. It is a good choice for small parties as well, when you drink wine or beer with your friends and need something sour, spicy and tasty.
It is quite easy to make. Let's follow me.
I. Ingredients:
- Chicken Shanks: 20-25 pcs
- Kumquat: 10 pcs
- Chili: 8 pcs
- Lemongrass: 5 pcs
- Vinegar: 5 spoon
- Salt: 2 teaspoon
- Garlic: 3 pcs
- Ginger: 2pcs
II: How to do
- Firstly, you need to remove the chicken toe nails. Wash and rewash all in salt water to make sure everything clean.
- Wash Lemomgrass, ginger, chili and kumquat, then slice into small pcs.
III: Boil Chicken Sharks
- Prepare a pot enough for 20-25 pcs of chicken sharks, put all in one pot when the water is boiled, add some lemongrass, ginger, garlic to make it fragrant. If you want nicer color of chicken sharks, you can add 1 teaspoon of saffron flour.
- Dont cover the pot. Boil it about 3-4 minutes
- To make chicken sharks crispy, after boiling, take it out and put into a big bowl with salt and ice.
IV: Lemongrass kumquat chili sauce
- We need to boil 1 litre of water, add sugar, vinegar, fish sauce, and salt. Boil it about 2 minutes and turn off gas. We have the mixture of sauce.
- Put your boiled chicken shanks into the mixture of lemongrass, chili, kumquat and vinegar.
My chicken shanks - You should not put lemon leave into your products though it has good smell but it will make our mixture bitter.
- Add more chili or vinegar up to your favorite flavour.
You had better put in glass bottle rather than plastic one to maintain and store it in fridge for longer time.

Chicken Feet! Is it usually sour flavor in Vietnam? In Korea, I have only seen them as very spicy. Never cooked them before, but it is not my favorite. lol
Sour and Spicy this food. In Vietnam, we have different ways to make chicken feet. Spicy BBQ chicken with honey, original BBQ or Chilli Cheese BBQ.
The one I introduce is my younger sis’s favorite. I hope I have chance to enjoy your korean Chicken feet. 😉
