Wuluh belimbing wuluh or boh limeng (silimeng) in the Aceh language is a fruit that has a sour taste.

This fruit is used for the main cooking ingredients in Aceh, such as salt too. Because starfruit is too easy to grow in Aceh, then there are two traditions related to this fruit, namely: kuwah masam keueueng (spicy acid sauce) and sunti acid.

Kuwah spicy acid is a kind of cuisine menu, its contents can be vegetables, can also fish or meat. While sunti acid is not a type of cuisine, but the type of spice.

Sunti acid is starfruit that has been preserved by way of dried and overgrown with a lot of salt.

This sunti acid can last months, even years if stored in a tightly sealed place.

The Acehnese use this sunti acid in every type of dish side dish, like salt.

The process of making sunti acid

Once the star fruit is picked, everything is soaked in water until the color turns from green to yellow and the fruit becomes tender.

Then, the starfruit is lifted, overgrown with salt in large quantities, and dried in the sun.

When the dry season or the sun blistering, approximately after being dried for two days, sunti acid has become. But if the sun is not hot or cloudy, then the drying process can day.

If successive rains while starfruit should be dried, then the quality of sunti acid will be bad, even berkulat (moldy).

The Aceh cuisine that is almost all rather acidic according to the tongue of outsiders is that almost all of them are covered with sunti acid.

The Acehnese outside Acehnese often ask their relatives in the village of origin to send sunti, for example once a year.

For the Acehnese, the sunti without sour food is only meurasa (unsatisfactory), although tasty.

BUAH belimbing wuluh atau boh limeng (silimeng) dalam bahasa Aceh adalah buah yang memiki rasa asam.

Buah ini digunakan untuk alat bumbu masakan utama di Aceh, seperti garam juga. Karena belimbing terlalu mudah tumbuh di Aceh, maka ada dua tradisi yang terkait buah ini, yaitu: kuwah masam keueueng (kuah asam pedas) dan asam sunti.

Kuwah asam pedas adalah jenis menu masakan, isinya bisa sayuran, bisa juga ikan atau daging. Sementara asam sunti bukan jenis menu masakan, tetapi jenis bumbu.

Asam sunti adalah belimbing yang telah diawetkan dengan cara dijemur dan dibumbuhi garam dalam jumlah banyak.

Asam sunti ini bisa tahan berbulan bulan, bahkan bertahun tahun jika disimpan di tempat yang tertutup rapat.

Orang Aceh memakai asam sunti ini di setiap jenis menu lauk masakan, seperti garam.

Proses membuat asam sunti

Setelah buah belimbing dipetik, semuanya direndam dalam air sampai warnanya berubah dari hijau menjadi kuning dan buah itu menjadi lembik.

Lalu, belimbing tersebut diangkat, dibumbuhi garam dalam jumlah banyak, dan dijemur di terik matahari.

Apabila musim kemarau atau matahari terik, sekira setelah dijemur selama dua hari, asam sunti sudah jadi. Namun apabila matahari tidak terik atau mendung, maka proses penjemuran bisa berhari hari.

Apabila hujan berturut turut sementara belimbing harus dijemur, maka kualitas asam sunti itu akan buruk, bahkan berkulat (berjamur).

Masakan Aceh yang hampir semuanya agak asam menurut lidah orang luar Aceh adalah karena hampir semuanya dibumbuhi asam sunti.

Para perantau Aceh di luar, sering meminta kerabatnya di kampung asal, untuk mengirim asam sunti, misalnya setahun sekali.

Bagi orang Aceh, masakan tanpa asam sunti itu hana meurasa (tidak memuaskan), walaupun enak.

Buah belimbing tentu saja tumbuh di luar Aceh, akan tetapi, sepanjang zaman, orang Aceh menjadikan belimbing wuluh sebagai bagian penting dari makanan untuk kehidupan mereka
