Chef Hori also explained, as a mark of respect for the fish, usually Tai fish is always processed from head to toe. This Tai fish also has two types of Tai fish obtained directly from the sea of ​​Japan, and from captive breeding. The price is different, for Tai fish directly from the wild sold at Rp2 million per 1 kilogram, and for fish breeding Tai sold at Rp500 thousand.
