It is already known, from ’70s, as gluten breaks down in the stomach to become a mixture of polypeptides, which can cross the blood-brain barrier.

Once they penetrate, they can bind to the brain's morphine receptor to produce a sensation of sensory euphoria. This is the same receptor to which opiate drugs are linked, creating the pleasure effect, which in turn develops addiction.
