Orange Scones~What I do at 2 am.

Once upon a time...Well, last night at about 2 am... I decided that I wanted biscuits. Most people at this time of night would just shrug their shoulders and tell themselves 'Oh well, so sad' or roll over and go back to sleep.

This was not the case for me last night. We had run out of bread a few days ago and have been too busy to run to the store to buy some more. This lead to me craving some plain old biscuits, warm and fresh from the oven. Lucky for me I always keep Bisquick on hand.

You can make your own homemade Bisquick also. There is a shelf life of three months with the homemade kind. I'm lazy. I just buy the bright yellow box. I always have a box on hand for times I feel like making something and don't know exactly what I want.

The Better Crocker website has a plethora of recipes that use Bisquick as a base ingredient. If I'm unsure what I feel like eating, I will go through the recipes on the site and see what strikes my taste buds.

With plain biscuits in mind, I bent down to grab my favorite mixing bowl from the corner cupboard and.....



Oranges!


Orange flavored biscuits would be really good I thought! Add in a little zest and a bit of the juice, I was going to be having fancy biscuits at 2 am. What more can one ask for? A lot, if you think too much about it. I decided to add a bit of sugar to the Bisquick instead. I figured if I was going to go the healthy route by adding a fresh orange to my biscuits I could afford to add in sugar too.

From there, things went a bit wacky. I saw the butter dish with just a bit of butter left in it. I decided a little fresh butter would give the orange biscuits a nice rich flavor. I will admit here, I went back and forth for a bit, in my mind, if I wanted flakier biscuits or not. I could use cold butter, cut the butter in with my pastry blender, before adding any wet ingredients to achieve this result.

In the end, this sounded like a lot of work to go through. I ended up just scaping the rest of the butter from the butter dish into the bowl. Using my spatula I cut in the butter as best I could. Eazy Peazy it was.



The original recipe called for 2 1/4 cup Bisquick and 2/3 cup of milk. I had added in sugar, orange zest, and butter by now. I went into the refrigerator to grab the milk and saw the carton of eggs. I was hungry. My biscuits were not done yet. I then did what any smart person would do.

I opened the carton of eggs, saw four eggs in there, grabbed a small frying pan and fried up two over easy eggs for myself. The other two eggs somehow ended up in the biscuit mixing bowl. Eggs always make things light and fluffy I thought. Really you can not go wrong adding in eggs to make biscuits?



Sitting down to eat my two cooked eggs while waiting for the oven to preheat to 400 Fahrenheit, I realized I still had not added any milk. Going back to the refrigerator I grabbed the milk and the sour cream.

What? The sour cream was sitting right there. It had already been open, so I grabbed it. It's a milk by-product and it's very tasty too! In the mixing bowl went a large heaping spoonful of sour cream and a small glug of milk.

The mixing could now commence.



While mixing everything together I realized this was really not a drop biscuit kind of batter anymore. From there my mind decided it was more like a scone type of batter. I like scones so I was still very happy with how things were turning out.

To get all of the flour incorporated I dumped the dough on my counter and kneaded it for a few minutes. Once the dough stopped being sticky I patted it into a ball. Placing the ball of dough on my cookie sheet I mushed it down until it was in the shape of a circle about one inch thick. Remembering an old recipe for scones, I went and grabbed a long knife and cut the dough into eight pieces.

What I didn't remember was to pull the eight pieces apart a little bit so they would bake nice and even. With my oven now up to temperature, in they went to get nice and golden brown.



Lucky for me when the orange scones were nice and light brown I pulled them out of the oven. I noticed that the middle of the scones were not all the way cooked. I then separated the eight pieces a bit and baked them for another few minutes. What came out of the oven then was pure yummy goodness.



I love when life gives you such a wonderful yummy surprise.



Baking is something I love to do. Nowadays I do not always have the energy to bake. When I do have the energy, it always makes me happy. I hope you enjoyed my story of how I go about baking.

You now also know why my Husband will always ask "What is it?" and "Is it any good?" when he sees baked goods on the counter. Below is the recipe for the fake orange scones. Will you take a chance and try to make them?



Orange Scones, kind of...



In a large bowl add:

2 1/4 cup Bisquick
1/4 cup sugar (optional)
Zest of one orange

Cut in 1/4 cup butter, room temperature, with a fork or spatula.

Add:

Juice of one fresh orange
2 eggs
1/4 cup milk
1/4 sour cream

Mix until ...... mixed...

Add some Bisquick to your counter and knead the dough until it's not sticky. Adding in the Bisquick from the counter if needed.

Pat dough into a ball.
Place on Cookie sheet.
Press down to form a flat circle about 1 inch thick.
Sprinkle top with sugar to taste.
Cut the circle into 8 pieces.
Pull the pieces apart slightly.

Bake in a 400F oven for 15 minutes.

They should be golden brown when done.

Where are the fishing, camping hunting posts?

Write about the fun stuff, not "cooking", I have enough of those when redpenning my wifes posts, which btw are rare and far and few between lately, since all the dramas and so on with all the BS out there.

Man, she is now using that photo app, to post and she is sticking to it as it seems to be the only way to post something without losing the willpower to post. Most of it isn't about cooking, thank the good Lord for that.

Holy hell lady, good thing you didn't go by the liquor cabinet while you were making these.
I have been known to doctor a few recipes myself a time or two so I shouldn't being throwing scones at you for this. Stones maybe, but no scones.
That sugar on the top was just icing on the cake I guess, glad they turned out well. What did the husband think we he tried them?

I'm not a great baker and therefore am a bit hesitant to try any new recipes, my husband is an excellent baker thankfully, when he has time that is. :D
Those look good, I've tried to make a nice fluffy biscuit to go with our roasts on occasion but they've never turned out, usually are hard like hockey pucks, and yes the first time or two they were almost as black as them as well, LOL. :D
