Bread Pudding - w/recipe

One of our favorite ways to use up day old or stale bread, is simple Bread Pudding. I think this is a Portuguese recipe, because I learned it from one of the grandmothers when I was a teen...but she never told me where she learned it.

The recipe is super simple, basically a custard.

1/2 C Raisins (drop these in a bowl and pour some boiling water over them...let them soak until everything else is in the bowl)

Whatever stale bread you have, up to 1/2 loaf
3 eggs (4 for high altitude)
3 C milk
1/2 C sugar (most recipes call for 1 1/2 C but that is Way too sweet. sometimes I just add 1/4 C or none)
1 t cinnamon
Butter

That is it...
I mix the eggs and milk first in a lg bowl
Break or crumble the bread into this, add cinn and sugar and mix
Drain the raisins and add them, mix a bit more
(sometimes I add a bit of vanilla or almond extract)

Pour it all in a baking pan, add some pats of butter around the top, and bake uncovered at 350 for an hour or until knife comes out clean.

We add all kinds of dried and fresh fruits, I like it with apples and cranberries too.

Bread pudding is one of my favourites.

My mum used to make it - it was always lovely with a bit of creamy milk.

Yes, she used to give us milk with it too...though now I have it with coffee or tea :) Is your recipe the same?

Those Portuguese grandmothers knew how to do things for sure! Yes, so long as the bread is not moldy it is still good to use this way. ..it can be hard as a rock stale, and the milk and eggs will soften it right up again.
