That looks delicious and the ingredients sound like a really tasty combination!

My gran used to make tripe and trotters and while many people absolutely hate it - I was young and had no idea what it was so I just ate it and I loved it!!!! So now, even though I know what it is, I still love it - though I have never made it myself. Is that something you know of too?

The next thing is to prepare the rice, as you can see it is a different way, I cook it in a pan, to which I add a little oil, some garlic cloves, which I let it toast a little, then I added the rice slowly while stirring.

This is an interesting method for cooking the rice - very different, but probably much more flavourful than just boiling it in water.

Here in South Africa we make a pot meal called "potjie" which is essentially a stew which is cooked over an open fire in a cast iron pot... and with some of the very traditional recipes, you actually cook all the meat and veg and then you add the rice on the top and it just cooks in the steam and heat of the pot itself - so also gets all the flavours of the other ingredients in the pot which is very yummy!
