Light & Easy Mexican dish - veggie bomb + how to eat more fruits & veggies

Hello, people!

I hope that you and your close people are well! I haven’t been active for a while but I’ve been working and cooking and working from home like a motherf***!

Today, I will be sharing with you one easy recipe for a light Mexican dish with eggs and milk that is like a baked veggie bomb. As you can imagine, more than 50% of the ingredients will be fresh vegetables!
Ever since we are little we’ve been taught that fruits and vegetables are good for us because of the variety of important vitamins, minerals, and plant chemicals. Yet we tend to eat not that much in our adulthoods...
Tell me honestly how often do you eat fruits and veggies in one week? How many different types are you including in your menu? If the answer is positive, I can only say “Good job”, but a lot of my close people don’t go that smart with their food. It is important to understand that and implement it in our everyday food routine. I am in a constant search of different new dishes that can help our household for the variety of ways you can actually eat and prepare a dish with any type of fruit or a vegetable!
Ingredients:
• 1 red pepper
• 2 carrots
• 1 tomato
• 1 onion
• 3 potatoes
• Salt
• Red and black pepper powder

For the mixture:
• 2 eggs
• 150 ml whole milk

Prepare 1 bowl in front of you because basically this is all you will be needing. Cut the vegetable into small cubes and pour in a baking pan. In the bowl mix the eggs, the milk, and the spices. Mix until noticing homogenous texture and the pour on top of the vegetables. Cover with aluminum foil and bake for 30 minutes in a preheated oven around 200℃. After that, remove the foil and bake 10 more minutes. If you want, you can add some cheese on top!

Serve only by itself or with a small portion of steamed white rice like I did. This will give you a feeling of satisfaction for a longer period of time after the meal.

For me personally there are several ways ar approaches in order to increase my daily dosage. Here are the ones that try implementing in my menu:
• Prepare fresh juices - since we don’t have a blender and I am not actually such a huge fan, I do not prepare smoothies at home as often as most people my age. I prefer the “good old” freshly squeezed juice right out the fruit or the veggie. They are way tastier to me!
• Prepare some fruits & veggies in containers as a ready-to-take snack - this way you have something pre-made and ready to enjoy every time you crave some snacks
• Try having at least one of both during breakfast - yes, you might not have time to prepare a sophisticated breakfast but if you try to stick at least to one of them, it will be beneficial. Today you can cut some tomatoes to accompany your sandwich and tomorrow you can have a banana or an apple with your afternoon milk or tea
• Include fresh greenery recipes both for your main meal and for dessert - you can have some vegetable dish to enjoy at dinner but you can also prepare some fruit cake for you and your family
