STEEMIT CULINARY CHALLENGE # 33: Berry Madnes! Bacon Wrap Tri-tip, Blueberry Muffins, Raspberry Vinaigrette (recipes)

Also if you got them from the wild you have an extra bonus. So once me and my friend Dany went to play disc golf and saw some blackberry bushes we gave ourselves to the duty of collecting some for my food :)
hahaha as you can see for my darkened smile, they are completely edible since I'm here posting this couple days after <3
They were not the ripest berries around but hey all you had to do was to look around :) and we did end up with a lot of berries to eat and bring home for the challenge :D
I was trying to get the ripe ones :)
Anyway back to my food this week menu consisted of:
Beet greens, raspberry, California avocado, Aged White Cheddar with Raspberry Vinaigrette
Bacon Wrapped Tri-tip Steak, Roasted Vegetables with Wild Blackberry Sauce
Blueberry-Bananaberry Spelt Muffins
So here we go:
For the Raspberry vinaigrette we need:
1 cup of raspberries
1tsp coconut sugar (you can use white)
3/4 cup balsamic vinegar
1/4 cup oil
1 tsp honey
first, we combine the sugar (whichever you choose) we don't use white sugar at all that is why I used coconut sugar and use coconut sugar for most of my sweets. But you can choose any sugar you want, and this is done to break down the raspberries and get the juices into the vinaigrette.
Mix the rest of the ingredients in a jar and shake pretty good until combined.
After couple minutes your berries should look like this and then we are ready to combine the berries and the liquids
shake pretty well and your vinaigrette is ready. This can be stored up to 2 weeks if you have a pretty hair tight container to hold it.
Then you can dress any salad with this marvelous vinaigrette :)
Moving to the main meal:
For this steak we need:
4 ea carrots
1 ea beet
3 slices of bacon
4 pieces of tri-tip
1 Tbs butter
6 oz blackberries
4 oz wine
And our little friends Salt and Pepper
Let's get hands on!
We start with the vegetables since this are hard vegetables they will definitely take longer to soften.Also, we have to make sure we peel them and make them look nice. ;) presentation.
Do not throw away the bigger greens I will use those for my salad, there is no reason to have such waste :) I will use as much as I can out of whatever I have to work with. That is a tio luis rule!
I actually did blanch my beet for around 10 minutes to make sure it was tender on the inside. Because I wasn't going to roast it for 1 hour I was really hungry :D
after that a quick rub of oil and some salt and pepper and place them in the oven at 350° F
Meanwhile, we rub the steaks with a little salt and pepper, but before hand doing this make sure you trim all the silver skin, thick pieces of fat or other weird things that your steak might have since some stores do not sell them as clean as they could because that will decrease the profit. This will help to make it more tender and soft. This is not the best steak for this but right now it is the perfect steak for my pocket :D hahah
Wrap them with the bacon tightly if you can, I used toothpicks to help the bacon stay in place. You can use any other method you think will help, I was thinking about tying them but toothpick were easier.
Heat up a pan with a little bit of oil to cover the bottom and place the meat.
Sear the top and sides, you can cook the bacon as crispy or tender as you like.
Those are all the trimming pieces I had after cleaning the meat. Dog food, my girlfriend doggies will love it :)
That's me and them watching tv couple months ago.
After searing the meat, we place it in the oven and cook until the desired doneness. I just timed it to the vegetable doneness as well.
You can also place it on a flat surface that will help the bacon crisp on the sides since my girlfriend likes it really crispy.
Just get them out of the oven after doing as you like it. I'd say around 6-8 minutes for mine
Now to the sauce.
We need to decrease the pan aka, get rid of the extra fat and we will rehydrate all those little bits stick to the bottom of the pan because that is a huge source of flavor!
I added the berries to caramelize them a little bit and bring the sweetnes since they were a little tart but you can start with the wine if you have sweet enough berries.
Once some of the juice came out of the berries and it turn sweeter it was time to add the wine, you don't want to wait a long time because we have to reduce the wine as well and burn the alcohol in it. So we stir and reduce to half or as thick as we want it.
We add the butter to make it creamier and richer, and we stir until incorporated.
Time for dessert which I had first once we ate.
For the blue berry banana berry muffins (now that we all know banana is a berry thanks to @woman-onthe-wing :)
we need:
3/4 cup mashed ripe banana (about 2 medium)
1 cup unsweetened almond milk
1 tsp apple cider vinegar
1/4 cup maple syrup
1 tsp vanilla extract
1/4 cup coconut oil, melted
2 cups white spelt flour
6 Tbs coconut sugar or other sugar
2 tsp baking powder
1 tsp ground cinnamon
1/2 tsp sea salt
1/2 tspbaking soda
1/2 cup walnut chopped
2 cups fresh blueberries
These muffins are simple and easy to make. took literally like 4 steps! (pre-heat oven to 350°)
First we combine dry stuff in a bowl and mix, we do the same with the wet stuff (make sure you smash the bananas if they are not super falling apart ripe)
except coconut oil, blue berries and walnuts.
First we add the coconut oil to the dry ingrediants then we mix it pretty good until incorporated :)
now we mix wet into dry and fold it. I did a gentle fold since you don't wat to beat them a lot this spelt flour is prety delicated and for muffins you don't want to develop that much gluten.
fold in the walnuts and blueberries genlty cuz we don't want to break them a lot and place them on greased muffin pans
and now as a little kid we just see our mouth droll and think on how good those muffins will be because they SMEEL delicious!!!!
All I could do was to watch into the oven door hahaha
we bake for around 25 minutes or until a toothpick comes out clean
Like this one right here.
After that we let out muffins cool down and take them out of the mold.
For my meal I made a bigger version of this cupcake size muffins. It is baking to the left :)

Now that the culinary challenge is over, I can say -- Nice foraging! I like how you focused on getting the ripe, black ones for eating right there, but got a mix of ripeness for your sauce. Those red-black berries will have some tang to them! And all of the berries that you used have wild versions of them, in the right habitat. Happy foraging!
Yeah, I really liked that tartness and acidity on the unripe ones. I wanted to pickle some maybe next time I go play disc golf I will gather some more

Pickled blackberries sounds good! I've used pickled blueberries in salads and they are great. Don't throw that disc into the middle of the blackberry patch! ; )
Nice foraging! Your experience shows how wild berries can be anywhere around us, like the disc golf course in a local park! It pays to look around from late spring into the fall. There are a lot of great wild berries and fruits out there, for the people that take the time to learn which ones are good to eat.
mmm yes, I really want to get more into it and start making more food with wild ingredients. I think it will be amazing to experiment with.

I really enjoy spending time in the kitchen so although I have taken part of this challenge twice only I think it will be a good tradition to keep my cooking sharp and try new recipes at least once a week.

Yes a lot of people find taking part in the challenge is good motivation for trying new things and being even more creative than usual! I'm glad to hear you're getting more out of it than just rewards :-)
Your photos and commentary are great and entertaining, but you can make it much simpler if you find it's taking too much time. As long as you write the ingredients and basic step-by-step process of how you made it, that is sufficient :-) And unless you want to, making more than 1 component isn't a requirement. Even just your raspberry vinaigrette would have been counted as an entry. As long as your entry meets all the rules, the way you present it to us is entirely in your creative hands!
ahhaha no way, I can't just feed myself and my girlfriend vinaigrette :P whole meal from now on! ahhahaha It feeds my pride as well :P

Good post @tioluis, really took your time to put up, keep it up and never be discouraged based on time invested on such great post. Am salivating already for those fruits, juice, and food, wanna become a Vegan.
hahaha sweet thanks it really takes a lot of time! I had no idea how long this takes but thanks for taking a look. I will post more vegan recipes me and my gf ourselves eat more like a paleo raw vegan diet. Not a whole lot of meat. If you have any questions about doing vegan stuff let me know I worked at a raw vegan restaurant for almost 5 years. I know a whole lot about vegan stuff, juicing smoothies etc etc
