the multipurposes sambal lado akan fried chilli sauce๐
I made a promise to @oliviackl to share this recipe because she wanted to know about my eggplant's sambal.
I think I have prepared this food at least 5 days a week now๐๐
So, I need to save my time on preparing the sambal lado for 3-5 days earlier๐ I learned from My Mom. Sambal lado is the must have on the table in my parent's house. Gibran my nephew is a big fan of Grandma's Sambal Lado and all my 3 brothers wouldn't eat without this red thing on their plates๐จ. In other words, My Mom should prepared a kilogram of chillies to fulfill her children and grandchildren request๐, that much for a week only!
what will happened when the price of ted chillies is so expensive like nowadays in my hometown?
Well.. Mom never has a choice, She should bought the ted chillies anyway. Better bought chillies rather than other things, because it will save the day ๐.
and this is my hubby and I favourite's food๐ stinky beans with fried salty anchovies. Please exclude this picture Judge๐ this is just an example about the use of that Sambal Lado๐.
So, How to make the multipurposes Sambal Lado?
As you know, in my country where different ethnics are exist and they have their own special recipes to make this Sambal Lado, I will share what I learnt from My Mommy.
The basic ingredients you need to make sambal lado. Red chillies (any types), shallot (red onion will do too), garlic and tomato. Some people will add ginger and kaffir lime leaf too, but not everyone loves it.
Use your blender or mortar to crush all those things with some water or cooking oil. I used the water, because I want it not too hot and spicy.
pre heat the cooking oils, for about 10 chillies, you need 50-65 ml cooking oil.
pour it into the cooking oil, let it for 3 minutes.
pour some water to clean the blender glass and add to previous sambal on the stove๐
it will look like this๐ now let the medium heat does it job, stir it once in a while. Cook it for 15-20 minutes๐
when it looked like this.. it does mean we almost got our sambal lado well-cooked.
If you keep sneezin' during the process, I can make sure that your Sambal Lado is really hot๐ you will need to add more water or a teaspoon lime juice๐. Add salt and sugar to the taste.
Beginner Question: How do I know that My Sambal Lado is well-cooking?
- You are not sneezin anymore when you try to smell the Sambal Lado๐
- You can see that the cooking oil separated from the chillies
- You smell no fresh hot red chillies fragrance anymore
- The colour of your fried sambal lado turning a bit darker than before
- Be careful.. don't let your sambal lado burnt out๐ you won't eat the bitter sambal, will you?
like this! And you can let cool down before you keep it your fridge for next time use or just use it right now by adding the fried tempe or fried eggplants.
Uhmm.. in case you want to make "Nasi Goreng" you can use this Sambal Lado as a base and add another ingredients like minced candlenut and ginger.
If you don't like too much cooking oil, you can fried all ingredients before you blend it๐ add sugar, salt and lime juice.. it will be great for your tacos or pita bread too๐ it will still calls as Sambal Lado in my country๐ when you use Green Chillies, it will be call as Sambal Lado Mudo๐.
The muslims all over the world will start the annual ritual next week, fasting for a month in Ramadhan. I will keep on posting about anything from my kitchen when I have time ๐. It's already tuesday @plantstoplanks ๐๐ Okay, I admitted that I made all those question based on my experience ๐ I burnt out my first sambal lado because I don't know how to recognised the smell of the well cooked and the fresh one ๐. It supposed to be a dummy questions for beginner... not the answers๐

I learned and I laughed at the same time. You are a great teacher Sweetie, because you are also entertaining. I also know, why in some of our supermarkets thy selling such a big packages of Chillies. Often I just want few for my recipe and they have only 1/2 kg packages of them, lol. I guess people from Asia who live here in Canada making this type of sauce. So now I know! However, I like chili sauce too, it is actually chili paste and I buy it already made, but I usually need only 2 tbs when I making something. Although, I should try this recipe as well. It's definitely my kind of taste. Oh and I will be sneezing like crazy for sure, lol ๐ถ๏ธ๐๐ถ๏ธ
๐๐๐ thank you @lenasveganliving ๐ I have another recipe for chilli paste.. you don't need that much of oil. Just steam the chillies and tomato.. the big onion that you use in many of your recipes (not the red one๐)and garlic before you blend it. But you need to keep it frozen and it tastes really spicy. My chilli sauce could make it for a week in room temperature but could be a month in the fridge. We have so many types of this chilli sauce.. some homemade production also available at the supermarket, though I always love to re-cook what I learnt from my mom๐
