Pumpkin Turkey Curry Recipe

In my family, we like pumpkin in savory and spicy dishes. This one is fragrant and spicy. Add more chili if you like it hot.

Pumpkin Turkey Curry Recipe

Ingredients

• 1 Hokkaido pumpkin, not too big, Cut into small cubes
• 2 tablespoons oil (we like to use butter)
• 1 pound ground turkey (my sons prefer this)
• 2 large onions chopped fine
• 4 garlic cloves minced
• 1 dried chili chopped fine
• 1 piece of ginger, about 2 inches in size, minced finely 
• 1 teaspoon ground turmeric
• 2 red or green bell peppers (whatever is in the garden) chopped
• 1 cup chicken stock (homemade if possible)
• 1 can coconut milk  (about 1 ¾ cups)
• 1 small can coconut cream (for added creaminess)
• 1 bunch of scallions chopped 
• salt and pepper to taste

Instructions

1. Melt butter (oil) in a pan. Chop onions and begin to fry. 
2. Mince up the garlic and the ginger. Place in with onions. 
3. Cut up the peppers and add to the pan. 
4. Add the ground turkey and stir until no longer pink. 
5. Add salt and pepper.
6. Add the small cubes of pumpkin, chicken stock and coconut milk. 
7. Let cook about 5 minutes. 
8. Add the coconut cream, bring to a boil and let cook for about 15 minutes
   or until the pumpkin cubes are tender.
9. Add the chopped scallions and cook for another 2 minutes.
10. Serve hot with rice

Pumpkin and turkey were 2 different things that never cross my mind to mix them together to make a curry dish, something new worth trying, thanks for sharing @cecicastor!

howdy there cecicastor! what in the world? pumpkin in turkey curry? I guess I've never had that combination, what nationality is that dish? lol.

My mom started cooking this and I just continued the tradition. It probably originated in India. They use a lot of curries. My mom was of English descent and her ancestors were with the British colonial army when India was a colony of England. They would have brought the recipes back with them.

howdy cecicastor! oh yes I see, how interesting to find out where that recipe came from! Yes it does look totally and authentically from India. and so healthy too with the curry and all.

My hubby used to add extra hot peppers to his, usually habanero!

howdy today cecicastor...oh wow, now that would be a different flavor also, adding habanero, wow. that would make it quite the bold dish!

I like the taste of habaneros, just not as much as hubby did. If I eat a quarter of one I am doing well. He would eat two or three whole! LOL

Try it! You will like it! LOL Funny when we lived in Canada, we didn't like a lot of spicy things...and now I crave spice!

I would really try this! We dont get much in the way of curry here it seems!

Why not? It is easy to make and you can add or subtract as much heat as you like! Homemade is so much better than what you can get in a restaurant...

Even better, i love cauliflower rice asn't just tried Broccoli rice yum in a rissotto :)

I love risotto! Can't get here anymore. One of the things that just there...

Use broccoli for the rice add a few mushroom, asparagus then add full fat cheese.. yummy :)

Oh, That does sound so tasty, Karen! I will be trying this soon as I have a broccoli coming along in the garden. I need to get some asparagus though...
