Wow, this looks so delicious. I haven't tried cooking with tempeh before. However, after seeing this, I definitely have to try it out. :)
It's a fun protein to play around with in things, if you can get some good stuff. Most tempeh is soy, which I generally stay away from; Portland just happens to be lucky enough to have 2 different brands of soy-free tempeh.

Thanks so much for the reply. I think where I am most tempeh is soy based so it might take me while to find some soy-free tempeh.
Ya, that's likely. You could always substitute veggie burgers, slices of zucchini, polenta, etc for the tempeh.
